Some Like It Spicy, Others like It Hot
The Food in Mexico
Just a quick word of advice before I continue: don't read this article if you're hungry.
I wanted to do an article about Mexican food because apart from tacos, burritos, nachos and fajitas, clearly most people don't know much about this gastronomy so good.
You say we eat a lot of tacos, yes Mexicans eat a lot of tacos, but what you have yet to discover is that there are really a lot of kinds of tacos. First of all, there are two types of tacos: those with corn tortillas and tortillas de harina (flour) which are my favorite.
The most famous are the Tacos al Pastor. Like every taco, they consist of the type of meat so here, al Pastor, then add lemon, avocado, cheese if you like, onion and coriander. There are also Arabic, oriental, pescado (fish), carnitas (meat), carne asada tacos… There is also gut, tongue, intestine and yes yes, I know – the worst part about it is that it is super good!
In short, there are a lot of them, I can't name everything. Shocking I know!
There are also cemitas is a torta originally from Puebla, Mexico which are a bit like a hamburger with the contents similar to those of tacos; the ingredients are sliced avocado, meat, white cheese, onions, the herb pápalo and red sauce (salsa roja), and yes it's too good!
There are many classics when it comes to Mexican cuisine; some are quesadillas (tortillas with melted cheese), enchiladas, tamales, esquites and elotes, the tostadas, the pozole (a kind of soup with meat, fish or a little whatever you want), burritos, chalupas … The list is long!
And of course, I can't talk about Mexican food without talking about salsa and chillies. Seriously, when people tease me that I put them everywhere, it is an understatement: and it is true. They land in almost all of our dishes, soups, in popcorn, fruits and desserts, in short, everywhere!
The best known is the Jalapeno.
I must also quickly talk about guacamole and avocados because it is another delirium than people unacquainted with true Mexican cuisine don't realize, we eat them with everything!
Of course, food depends on the states; each state has its own specialties. For example: The specialty of Puebla is the Poblano mole which is actually chicken covered with a sauce made from chocolate, yes it sounds weird and I admit that it might sound off putting for some but it truly is a classic.
As far as drinks go, tequila is really THE Mexican drink, there are some famous variants: agua de jamaica (purple) and hotchata (in white).
Food is a big part of Mexican culture as it is with any region. Enjoy!
